In our house, smoothies and smoothie bowls are ALWAYS a hit. This pumpkin pie smoothie bowl is such a favourite that Noah’s reaction was to tell me “Mama, you worked really hard on this because these are the best smoothie bowls ever!”
They’re super simple and don’t take a lot of ingredients to pull off. Excuse the “lazy” recipe, but I don’t measure anything!
Here is the general breakdown:
1/2 can of pumpkin purée or pumpkin pie flling
1/2 cup plain or vanilla yogurt (Greek yogurt would be best as it is thicker – we just used what was in our fridge this day)
supplements of your choice (pictured here is collagen, but use whatever you normally use. I was out of vegan protein)
1 cup almond milk
2 frozen bananas
1 tbsp hemp hearts
cinnamon and/or pumpkin pie spice
sweeten with dates or agave nectar if needed
1 cup ice to help keep it extra thick
Blend until smooth
Top with your choice of toppings!
We used:
coconut flakes
fresh raspberries
raw, unsalted pumpkin seeds
granola
slivered almonds
