
If you’re looking for a fun way to make honey into something a little more special, you’ve got to try these flavour-infused honeys! My sister and I spent a day trying out some new recipes and projects and we really enjoyed this one! It was so easy and would be the perfect hostess gift or a neighbour gift over the holidays. We made three flavours: rosemary, red pepper, and vanilla bean. The rosemary would be amazing drizzled on a pear and gorgonzola pizza (can’t wait to try that), the spicy chilli flake honey is delicious drizzled over a soft brie on french bread, and the vanilla honey really takes your morning tea or coffee to the next level! Get creative!
What you’ll need:
- honey (don’t use a special or expensive honey, just a neutral flavour)
- 1-2 rosemary sprigs
- 1 vanilla bean
- 1 tsp red chilli pepper flakes
- pot
- funnel/pyrex – any vessel for pouring precisely
- small glass jars (I found mine at Michael’s)
- 3 mason jars if you’re making all three flavours
The process is simple. Just warm the honey in a pot over medium heat. Once warm, add your ingredient into a mason jar and pour the warm honey over it. For the rosemary, just throw the whole sprig or two in whole. The vanilla bean should be split in half and the seeds scraped out. Put all of the seeds as well as the pod into the jar. The chilli flakes just go in as-is and pour the honey over!
Allow it to cool completely to infuse the flavour as much as possible. You may find it easier to pour into your smaller containers if you microwave it for a few seconds before transferring to your smaller containers, but that’s up to you. The only one ingredient you need to remove is the rosemary. You can strain out the chilli flakes or vanilla if you’d like, but I love seeing the flecks of vanilla beans and the chilli flakes in the other two jars.
