
If you’ve followed me for any length of time, you’ll know that smoothies and smoothie bowls of all kinds are a big staple in our house! Not only are they healthy and fairly quick to make, my kids love them! They have even been known to ask for them over the option of waffles (weird, I know). This açai bowl is one of the biggest hits but if you have little kids who are messy, don’t forget to put a bib on them!
Açai is a fruit native to Central and South America and is packed with antioxidants and Omega-3 fatty acids. I add greens in as well because its the easiest way to sneak veggies into my kids’ meals, and the toppings are packed with fibre. When you use açai you can buy a frozen puree that you just throw into the blender or buy a freeze-dried powder. Neither is inexpensive but we use the powder and find that a fairly small bag lasts us quite a long time. You can buy the powder here.
You need to use frozen bananas to give it the creamy, thick consistency of a smoothie bowl (much thicker than a regular smoothie). If you are using the frozen puree packets of açai then you can just use room temperature bananas.
INGREDIENTS
1-2 tablespoons açai powder
1 frozen banana
1/2 cup blueberries or mixed berries
1/4 cup frozen pineapple chunks
1/2 cup frozen spinach
3-4 dates for sweetness (or a spoonful of honey, if you prefer)
1 cup (approximately) almond milk, coconut, or the milk of your choice
1 tsp hemp hearts
Protein or other supplements of your choice (optional) – I only add this to mine and not to the kids’
1 tbsp nut and seed butter of your choice
You can then add any extra smoothie ingredients that you like to use – go crazy! Just don’t add too much liquid or it will not be thick enough. You can always add more almond milk as you blend if it isn’t blending well.
DIRECTIONS
Blend all of the ingredients together in your blender (I recommend a Vitamix!) and then add the toppings you like. Here’s what I add on ours:
TOPPINGS
Banana and strawberry slices
Granola
Shredded unsweetened coconut
Raw cocoa nibs or dark chocolate MINI chips (just a few)
Pumpkin seeds
Pomegranate seeds
